Crunchy corn chips and a zingy mango salsa are the perfect match for Waitrose luxurious No.1 prawn cocktail. A no-cook picky dinner to share. 


Ingredients 

  • ½ mango, finely chopped
  • ½ avocado, finely chopped
  • 1 red chilli, thinly sliced, deseeded, if liked
  • 1 unwaxed lime, zest and juice
  • 1 little gem lettuce, leaves separated
  • 140g Manomasa Green Lemon & Pink Peppercorn Corn Chips
  • 170g pack No.1 Prawn Cocktails
  • ½ punnet No.1 Microgreens, snipped

  • Method
  • Mix the mango, avocado and chilli with the lime zest and juice, then season to taste and set aside.
    1. Arrange the little gem over a large platter, like little boats. Snap 16 corn chips into smaller pieces and scatter into the lettuce.

    2. Spoon over the prawns and their sauce, then top with the mango and avocado salsa, scatter over the microgreens and serve

    These scoops also make a delicious, quick and easy party canapé to serve eight.
